Shikimic acid, C2H6(OH)3COOH, 2-3-4-5-tetra-hydro-gallic acid is obtained from the Japanese star anise. It is a percursor in the biosynthesis of aromatic amino acids an of lignin.
Shikimic acid is present in sugar cane. In raw juice it attains 900 ppm on solids (Florida, US) (Clarke S., 2001).
